Christmas Pudding Ice Cream

Step 2 in a separate bowl whip the cream until it holds soft peaks then fold it into the mixture with a large metal spoon.

Christmas pudding ice cream. Mix all of the boozy fruit ingredients together in a bowl then microwave on high for 3 mins. Put pudding and ice cream mix into a pudding shaped bowl lined with cling film and put in freezer to firm up. Mix ice cream and christmas pudding together in a large bowl. Don t add to much or your mix won t freeze.

60 minutes plus churning time. For the ice cream put the spices in a saucepan and gently heat for 3 mins or so stirring once or twice until fragrant. The ice cream can be served on its own or as one part of a more substantial festive dessert. Break up the christmas pudding with a fork and stir it into the egg mixture so it is evenly distributed then pour in the brandy and mix again.
